Rain Forest Cookies

Lately on the online group that I am a part of the ladies having been sharing alot of cookie recipes. Well because of that I thought that I would share this recipe from our lessons on the Rain Forest. I got this recipe originally from The Rain Forest Grew All Around. A really great book. The cookies came out really well. My dh said that the consistency was like that of a spice cookie, kind of a cake texture.

Ingredients:

2 to 2 1/4 cups all purpose flour

1 tsp. baking soda

1 tsp. salt

1 tsp. cinnamon

1 stick of butter (1/2 cup) softened

1 medium ripe banana

1/2 cup of granulated sugar

1/2 cup brown sugar

1 tsp. vanilla extract.

2 eggs

1/4 cup sweetened coconut flakes

4 cups of chocolate chips

1 cup chopped cashews

Preheat the oven to 375f.

combine 2 cups flour, baking soda, salt and cinnamon and set aside. Beat butter, bananas, sugars and vanilla until creamy. Beat in eggs then add the coconut flakes. Gradually add flour mixture using extra flour if needed. Stir in the chocolate chips and cashews. Drop by Roounded Tablespoon ont a ungreased baking sheet. Bake 10 to 12 minutesuntil golden brown.

In the ingredient list they bolded the items from the rainforest so I did to. Hope you enjoy, they are really yummy.

mmmm, we haven't done any "holiday" baking yet, but we will start this week.
